Hot & Spicy Chilli Garlic Noodles

- Noodles/Spaghetti - whole wheat for two
- 1/4 Cup Spring onions Chopped
- 1 Pc Bell pepper Sliced
- 1/2 Pc Carrot Julienned
- 7-8 Pcs Button mushrooms Sliced
- 2 Tbsp Oil
- 1 Tsp Red chilli flakes
- 10-12 Cloves Garlic crushed
- 1.5 Inches Ginger crushed
- Salt To taste
- Black pepper To taste
- 3 Tbsp Tomato sauce/ketchup
- 2 Tsp Red chilli paste
- 1 Tsp Chilli vinegar
Garnish
- Spring greens
- Red chilli flakes
- Sesame seeds
Boil noodles as per packet instructions.
In a wok, heat oil, add red chilli flakes and sauté ginger and garlic.
Add in the spring onions, sauté for a min. Add in the mushrooms and sauté on medium high heat for another minute.
Add the remaining vegetables and sauté until they cook but maintain their crunch.
Add salt and black pepper, tomato sauce and red chilli paste. Add in the chilli vinegar too.
Continue to sauté on high heat. Add in the noodles, mix, taste and adjust seasonings.
Garnish and enjoy!!!
